Navigating Cafe Pay Rates in Australia: A Guide to Wages, Penalties, and Superannuation

Running a successful cafe is about more than just pouring the perfect flat white—it’s also about ensuring your team is paid correctly and fairly. With the complexities of the Restaurant Industry Award and the Hospitality Industry (General) Award, navigating base rates, penalty multipliers, and superannuation entitlements can feel like a full-time job in itself.

Whether you're an established cafe owner or a manager onboarding new waitstaff and baristas, understanding how age, employment type, and shift times affect pay is crucial to staying compliant and keeping your staff happy.

To make this easier, we’ve put together a comprehensive Cafe Employee Pay Rates & Penalties Worksheet that breaks down the math for you. Here’s a quick overview of what you need to know:

1. Junior Rates and the "Alcohol" Rule In Australia, base pay for junior staff scales with age. A 17-year-old earns 60% of the adult rate, while an 18-year-old earns 70%, stepping up until they reach the full adult rate at 20. However, there is a very important exception: if an employee is 18 or older and required to serve alcohol, they must be paid the 100% adult rate, regardless of their age.

2. Weekend and Public Holiday Penalties Cafe culture thrives on weekends, but those shifts cost more to staff. Penalty rates apply based on the day of the week and the employee's level. For a Level 2 adult employee (Standard Waitstaff/Barista), Saturday shifts generally attract a 125% multiplier for permanent staff and 150% for casuals. Public holidays bring that up to a massive 225% for permanent staff and 250% for casuals.

3. Permanent vs. Casual Loadings Are your staff casual or permanent? Casual staff receive a 25% loading on top of their base hourly wage to compensate for their lack of paid leave (like annual and sick leave). Permanent part-time or full-time staff accrue these benefits instead.

4. Superannuation Entitlements (The 12% Rule) Superannuation can be tricky, especially with younger staff. The current Superannuation Guarantee is 12% of Ordinary Time Earnings (OTE).

  • Adults (18+): Earn super on every hour worked, with no minimum earnings threshold.

  • Under 18s: Only entitled to super if they work more than 30 hours in a single week. Remember, super is paid on ordinary hours and weekend penalties, but not on overtime.

Take the Guesswork Out of Payroll We know how tedious these calculations can be, which is why we created a handy, all-in-one spreadsheet that calculates base rates, weekend penalties, overtime rules, and superannuation rules for a standard Level 2 cafe employee.
